Cauliflower Gnocchi

I don’t know about you all, but I am obsessed with Italian! When the weekend comes around you know I will have a glass of wine in hand, charcuterie board in place, and either a pizza or pasta cooking.

I have never been a big fan of gnocchi, but there was always this hype, some might call a cult following, around Trader Joe's Cauliflower Gnocchi. I tried it about two months ago, and it has been life changing! I actually cannot believe I went so long without knowing about these magical little balls of heaven. It can be made so many different ways with different sauces and mix ins. At 360 calories a bag it is not a bad option for eating clean with big taste!

Ingredients:

  • 2 bags of cauliflower gnocchi

  • 2/3 bottle of vodka sauce

  • 2/3 roll of Regular Jimmy Dean Pork Sausage

  • Basil (garnish)

  • Grated Parmesan (for garnish)

  • Spinach (optional)

Servings: 4

I prefer to air fry my gnocchi because I like the firmer texture. You can also follow the directions on the bag for cooking in a skillet.

To start, warm up your air fryer to 350 degree for a few minutes. Drizzle the gnocchi with just a little bit of avocado oil and put in the air fryer for 15 minutes, checking about half way through. You want them to look slightly browned. I do one bag at a time, so they do not get overcrowded.

While the first batch of gnocchi is cooking, take about 2/3 of a package of Jimmy Dean Sausage and put it in a large skillet over medium high heat. Use a spatula to break the sausage up into crumbles as it cooks.

Once the sausage is cooked, and the second batch of gnocchi is about 5 minutes away from being done, add the vodka sauce, and spinach to the pan with the sausage to heat up. You can turn down the heat to medium heat at this point. Finally, add in all the cooked gnocchi to the pan and stir to combine.
