This past week my family and I made some homemade sushi! It was a really fun, and surprisingly simple. We did learn a few tricks to make things go a little easier!

  1. Buy premade sushi rice- this is the messiest and hardest part of making sushi, and it is so cheap to buy it pre made at any sushi restaurant.

  2. Cut up any add ins you or your family might want. I chopped up some cucumber, avocado, cream cheese, carrots, jalapeño, and green onions

  3. Get sushi grade sushi from the store. I got tuna, and sliced it into cubes. I marinated mine with coconut aminos, a little sesame oil, siracha, and green onions.

  4. Buy plenty of sheets of Nori. With four people making four rolls we only went through one package.

  5. Get plenty of bamboo rolling mats. They are only about $4, so we got one for each of us to have our own little station. We put a giant sheet of aluminum foil under them, so there was not a lot of cleanup.

  6. Watch a video of how to roll a sushi roll. There are so many quick videos on YouTube, and it seriously helped so much.

  7. Finally, roll and enjoy!

I write this post as I sip on one of these Memorial Day Mules, and I promise they do not disappoint! I was thinking of a festive drink I could make for this rainy Memorial Day in Texas, and I always love a Moscow Mule on a rainy day. This is not a traditional mule as it is made with vodka, but I could not do a Texas Memorial day with out some Tito's vodka!

Ingredients:

  • 2 Oz of Vodka

  • Handful of mixed barries (plus a bit more to garnish)

  • Mint

  • 1 Lime

  • Ginger beer

Muddle the mixed berries, one mint leaf and the juice from one lime together. Next add the vodka to a glass with ice. Take the muddle berry mixture and add three tablespoons. Fill the remainder of the glass with ginger beer. Garnish the drink with some berries and fresh

This appetizer is so easy and you only need two key ingredients! All you need is goat cheese and the Trader Joe's kale pesto. It pairs great with vegetables, Nut Thins or just plain crackers.

Ingredients:

1 package of Goat Cheese

1 Tablespoon of Kale pesto

Drizzle of Avocado oil

Salt and Pepper to taste

Heat the goat cheese up for a few seconds in the microwave until it is slightly soft (about 10-15 seconds). Add the kale pesto, and whip the two together. Drizzle the avocado oil and a little salt and pepper to taste.
